Grilled Chicken Salad

For me, probably the quickest and most satisfying dish in my arsenal.  Takes less than 4 minutes to make and supplies enough fuel for at least a few hours.

Ingredients:
* 2 1/2 cups diced, cooked chicken
* 1 (8 oz) can sliced water chestnuts (drained)
* 1/2 cup thinly sliced celery
* 1 cup halved green grapes
* 3/4 cup low-fat salad dressing
* 2 teaspoons finely minced onion
* 1 teaspoon lemon juice
* 1/4 tspn. ground ginger
* salt and pepper for taste

Preparation:
Combine chicken, celery, water chestnuts and grapes in a large bowl – set it aside. In a different bowl, mix together remaining ingredients; add to salad and toss to thoroughly coat. Eat immediately or chill until serving.

    Trust me- mine didn’t turn out looking like that. I don’t know what to think of it, it confuses my tastebuds a bit.

    Seriously?! 3/4 cup of dressing – that seems like a lot

    Love this chicken salad. I like to use miracle whip instead of salad dressing and add something for spice and a kick

    That does look really good! I love salads so I will just add this to the ones I already eat.

    Try tzatziki sauce instead of salad dressing. great flavour, really low in calories!

    Keep in mind that it says LOW-FAT dressing. Having 3/4 cup of standard dressing would not be good. Likewise, for the miracle whip alternative mentioned, it would be highly advised to use the low-fat version.
